muesli for breakfast

i’ve said it before and i’ll say it again, breakfast is my favourite meal of the day. and i’m definitely a creature of habit when it comes to breakfast. i will eat the same thing day after day, week after week until i find something else to tickle the early morning taste buds.

for now, my favourite is muesli, not just any muesli, but my home-made-whatever-is-in-the-pantry-at-the-time-muesli. and when i make it, i make a big container so it’s ready for me everyday.

basically, it’s oats, quinoa, nuts and seeds, but it varies each time i make it, adding in whatever i have in the pantry. so, if you don’t have an ingredient but you want to make the muesli just use what you’ve got and make it to suit your taste buds.

what you need

4 cups oats
2 cups quinoa
1 cup each almonds, walnuts, macadamias, pepitas, sunflower seeds, shredded coconut, sultanas, goji berries, cranberries, inca berries
½ cup each flax meal and chia seeds

what to do

add everything to a large bowl, mix it together and store in an airtight container

to serve

serve with your favourite nut milk, or coconut yogurt, or berries, or banana and cinnamon

i put a cup of frozen berries in a saucepan, pour boiling water over the top to defrost them, drain and pour onto the muesli. the liquid of the berries is enough to not have to add milk or any other liquid.

  1. Oh yum! I always struggle with what to eat for breakfast! It’s either toast, weet-bix or porridge.. boring… my kids get breastmilk, which is enough for them, but then I’m left starving!
